Dough divider with a flour duster
The invention relates to a dough divider for cutting a mass of dough into dough pieces. This divider includes a bowl intended to contain a quantity of dough with an access opening and a movable bottom. This movable bottom is movable in a substantially vertical direction.
The divider is also equipped with a dividing device having a grid which can be moved between an open position, in which the access opening is open, making it possible to place the mass of dough on the movable bottom or to remove dough from the tank, and a closed position, in which the grid extends above the bottom. This grid has meshes to divide the mass of dough into dough pieces
The divider includes means for driving the bottom relative to the grid, when the grid is in the closed position, between an elevated position, in which the surface of the bottom is adjacent to the underside of the grid, and a lowered position , in which a distance is present between the bottom and the lower side of the grid. This distance is equal to or greater than the height of the mass of dough placed on the movable base.
Such dough dividers are, for example, described in the documents FR 2956950, BE 1022690, FR2997606, EPI520476 and BE 1021711.
To prevent the dough introduced into the vat from sticking to its interior walls, the bottom, the blades and the inside of the lid, the baker sprinkles flour in the vat and on the dough when it is introduced into the divider. This is done manually by taking a handful of flour and sprinkling it in the bowl.
By sprinkling flour in the bowl in this way, a lot of flour is poured out next to the bowl, a cloud of flour dust is created and the flour is not deposited regularly in the bowl.
The invention seeks to remedy these disadvantages by presenting a flour processor which makes it possible to sprinkle the inside of the tank and / or the dough in a very regular manner, without flour being spilled next to the tank. In addition, this farineur
BE2017 / 5033 allows you to work more hygienically without having to take flour by hand.
To this end, the divider according to the invention comprises a mobile flour duster with a container for flour having at least one orifice for distributing flour in the tank. This container can be moved, in a direction of movement, above the tank and opposite said access opening. The farineuse also comprises a flow actuator for pouring flour through the aforementioned orifice and has drive means for driving the flow actuator when said container moves above the opening of access.
Preferably, during its movement above the tank, the floury material is guided by means of guide means which extend along the opening.
Advantageously, said drive means comprise a roller cooperating with the flow actuator, this roller being in contact with a support surface extending at least along the opening, when the container is moved above this opening.
The container can be placed in an unobstructed position, in which the container extends next to said opening.
According to a particular embodiment of the invention, the flow actuator comprises a closure member which can be moved between a closed position, in which said orifice is closed by the closure member, and an open position, in which the orifice is at least partially open.
Advantageously, the flouring machine comprises a spring which drives the closing member towards the closed position.
According to a preferred embodiment, the above roller has an axis which is fixedly mounted relative to the closure member and the roller is movable vertically relative to the container. Thus, when a vertical pushing force is exerted on the container towards said support surface, the roller moves relative to the container and drives the closing member towards the open position against the action of said spring.
The roller is, for example, mounted on a drive arm having an axis of rotation in common with the closure member. This axis extends substantially transversely relative to said direction of movement.
BE2017 / 5033
Preferably, the flow of flour is adjustable by the presence of at least two rows of orifices in the container for distributing flour in the tank. These rows extend parallel to each other and transversely to the direction of travel. The drive arm can be fixed in several positions with respect to the closure member allowing to adjust the number of rows of holes, which are covered by the closure member in the open position of the closure member .
According to an alternative embodiment of the invention, the aforementioned roller rotates about its axis and drives the flow actuator following the movement of the container above said access opening.
The container can be placed in said disengaged position, in which the container extends next to the opening and the roller preferably extends at a certain distance from the support surface, in order to prevent the agitator member is driven by the roller at the location of this released position.
In this alternative embodiment, the divider preferably comprises elevation means for moving the roller in a vertical direction in order to move the roller away from the support surface when the container enters, during its movement, said position. cleared or to put the roller in contact with the support surface when the container is moved from this cleared position towards said opening.
According to a preferred embodiment of the invention, the lifting means comprise a wheel mounted to the container and suspended freely relative to the support surface when the container is moved above the opening. This wheel is supported on a support surface when the container enters said released position by releasing the roller relative to the support surface.
According to a particularly advantageous embodiment of the invention, said support surface extends over a rib extending along said opening in the above-mentioned direction of movement. The roller can move on this rib by rolling on the support surface thereof.
According to an important embodiment of the invention, said wheel extends laterally with respect to the roller and with respect to the said rib, while the lower end of the wheel extends to a level situated between the level of the support surface and that of the support surface. The rib extends in the direction
BE2017 / 5033 displacement to the location of the end of the access opening, so that, when the container is moved from this opening to the released position, the wheel bears on the support surface and the roller detaches from the rib.
Other details and particularities of the invention will emerge from the description given below, by way of nonlimiting example, of some particular embodiments of the invention with reference to the accompanying drawings.

FIG. 12 represents a bottom view of the farineur of FIGS. 9 to 11, when the closing member is in its open position.
Figures 13 to 16 are views similar to those of Figures 9 to 12 and show the farineur when only one row of openings is open in the open position of the closure member.
In the different figures, the same reference numbers refer to the same or similar elements.
The invention generally relates to a dough divider which moves over the access opening of the divider tank. This flour processor includes a container for containing flour and has a flow actuator for flowing the flour to the tank when the container is moved above the access opening of the tank. Means are provided for driving the actuator while the container is moving above said opening.
For clarity of the figures, a dividing device comprising a grid for dividing the dough into dough pieces is not shown. A cover, which could be provided, is also not shown. These elements, which are generally pivotally mounted relative to the tank, are known per se to those skilled in the art.
Figures 1 to 5 show a tank 1 with a movable bottom 2 of a dough divider. The tank preferably has a rectangular horizontal section and has an access opening 3 extending in a horizontal plane to allow a mass of dough to be placed on the movable base 2 or to remove dough pieces from the tank 1. The access opening 3 has four straight edges and extends in the plane of the upper surface of a frame 4 which surrounds the tank 1.
In the embodiment of the divider, shown in Figures 1 to 5, a rib 5 extends along the edges of the opening 3. Thus, this rib 5 is somewhat elevated relative to the upper surface of the frame 4 .
When a cover or grid, not shown, closes the access opening, it generally bears on the upper surface of the frame 4 and / or on the rib 5.
The divider comprises a mobile flour duster 6 with a container 7 intended to contain flour. The container 7 has an oblong shape and extends practically parallel to a straight edge of the opening 3 and to the upper surface of the frame 4.
BE2017 / 5033
The container 7 can be moved, in a direction of movement, above the tank 1 and facing the opening 3 by means of guide means extending along the opening. The guide means comprise a rail 8 which extends parallel to an edge of the opening 3 and substantially perpendicular to the longitudinal direction of the container 7. A slide 9 is guided by the rail 8 and is connected to one end of the container 7. The opposite end of container 7 has a roller 10 with a rotary axis extending substantially transversely relative to the rail 8. When the container 7 is moved above the opening 3, it is therefore supported at a end by the slide which moves along the rail 8 and, at the opposite end by the roller 10 which rolls on the upper surface of the rib 5. This upper surface constitutes a support surface 13 for the roller 10.
To allow the distribution of flour in the tank 1, the container 7 has an opening 11 in its lower part through which the flour can flow towards the tank 1. In the embodiment shown, this opening 11 is oblong and s' extends over the width of the container 7 and substantially transversely relative to the direction of movement.
A flow actuator, also called an agitating member in the present description, is formed by a rotary cylinder 12 and extends in the container 7 and partially in this orifice so as to maintain a distance between the edges of the orifice 11 and this cylinder 12. Thus a slot is present between the edges of the orifice 11 and the cylinder 12 to allow the flow of flour to the access opening 3 when the cylinder 12 rotates about its axis. The length of the cylinder 12 corresponds substantially to the width of the opening 3 transversely to the direction of movement.
In order to rotate the cylinder 12, the latter is connected to drive means comprising said roller 10. The cylinder 12 and the roller 10 are preferably mounted on a common axis, so that when the container 7 is moved above the opening 3, the roller 10 rolls on said support surface 13 of the rib 5 and drives the cylinder 12 around its axis. Following the rotation of the cylinder 12, the flour is forced to flow through the slot between the edge of the orifice 11 and the cylinder towards the tank 1.
To allow the opening to be closed by said cover or by a grid, as mentioned above, the container 7 can be placed in a position
BE2017 / 5033 released, as shown in FIG. 1. In this released position, the container 7 extends next to the opening 3 and the roller 10 extends at a certain distance from the support surface 13 in order to prevent the agitator member, in particular the cylinder 12, from being driven by the roller 10 at the location of this released position.
FIG. 4 shows the container 7 in the released position in which the roller does not rest on the support surface 13 of the rib 5.
Elevation means make it possible to move the roller 10 in a vertical direction so as to move it away from the support surface 13 when the container moves from above the opening 3 to the released position. These elevation means comprise a wheel 14 which is mounted on the container 7. This wheel 14 extends parallel to the roller 10 and is mounted on the same axis, but can rotate freely around the latter independently of the roller 10.
When the container 7 is located above the opening 3, it is supported by the roller 10 which rolls on the support surface 13 formed by the upper side of the rib 5, while the wheel 14 extends parallel to the roller 10 next to the rib 5 and is freely suspended.
The diameter of the wheel 14 is greater than that of the roller 10, but small enough so that the wheel 14 does not touch the upper surface of the frame 4 when the roller 10 is supported by the support surface 13.
At the location of the released position, a bearing surface 15 extends next to the frame 4. In the embodiment shown, this bearing surface 15 extends in the plane of the upper surface of the frame 4 During the movement of the container 7 from the opening 3 to the released position, in said direction of movement, the roller 10 is detached from the rib 5 at the end of the access opening 3 and is moves vertically until the wheel 14 is supported on the support surface 15. Thus, the agitator, in particular the cylinder 12, is no longer driven in this released position since the roller 10 is suspended freely above the bearing surface 15.
In FIG. 6, the container 7 is shown in full line when it is above the opening 3 and the roller 10 is supported by the support surface 13 of the rib 5. This situation is also shown in the figures 2 and 5.
The container 7 of FIG. 6, which is shown in dotted lines, is in the released position in which the wheel 14 is supported on the support surface 15,
BE2017 / 5033 while the roller 10 is suspended above this surface 15 and is detached from the support surface 13. Figures 1 and 4 show the container 7 in this released position.
When the tank 1 is to be sprinkled, the container 7 is moved from the cleared position towards the opening 3 and through all of this opening to the position of FIG. 3. When the roller 10 comes into contact with the surface 13, the container 7 is mounted a small distance by releasing the wheel 14 from the support surface 15. While the container 7 is still moving, the roller 10 rolls on the support surface 13 of the rib 5 by driving the cylinder 12 and flour is therefore distributed in the tank 1 as the container 7 moves. While the container 7 moves above the opening, the lower end of the wheel 14 extends to a level located between the level of the support surface 13 and that of the support surface 15.
In Figures 7 and 8 an alternative embodiment of the lifting means is shown. Unlike the previous embodiment, a rib 5 is not present and the diameter of the roller 10 is somewhat greater than that of the wheel 14. Thus, the support surface 13 corresponds to the upper surface of the frame 4.
The bearing surface 15 is formed by the upper part of a rib 16 which extends next to the frame 4 in the extension of the direction of movement of the wheel 14. Thus, in the released position, the wheel 14 is supported by the bearing surface 15 of this rib 16, while the roller 10 extends next to the latter, as shown in dotted lines.
In the embodiments of the invention described above, one end of the container is guided by a rail 8, but it is also possible that the guide hubs are constructed otherwise. Thus, the container 7 could have at each end a roller 10 which is guided by the groove 5 extending along the edge of the opening 3. In such a case, the rollers 10 are, for example, provided with a circumferential groove which engages with the rib 5.
It is also possible that the container has at each end elevation means cooperating with a support surface 15 in its released position.
Since in the examples above, the wheel 14 and the roller 10 are mounted on the same axis, it is also possible that they have axes
BE2017 / 5033 different. In addition, it is not necessary that the roller 10 and the wheel 14 are positioned laterally relative to each other, but they can also be mounted one above the other. Thus, the bearing surface 14 can be formed by a rod which extends to a level suitable for receiving the wheel 14.
It is understood that the invention is not limited to the various embodiments described above, but that still other variants can be envisaged without departing from the scope of the present invention.
The agitating member may for example comprise a rotary axis which is provided with projections in order to stir the flour present in the container to make it flow through the orifice 11. In such a case, the container may include a orifice in the form of slot extending along the container or the lower part of the container may be provided with several small holes and thus form a sort of sieve.
Another embodiment of the divider, according to the invention, comprises a mobile flour duster as shown in Figures 9 to 16. The tank 1 and the access opening 3 are not shown in these figures.
This flour processor 6 also comprises a container 7 which can also be moved above the tank 1 opposite the access opening 3, in the direction of movement, from said released position. The longitudinal direction of the container 7 extends transversely to this direction of movement.
The container 7 has in its lower part two rows 11a and 11b of orifices 11 for distributing flour in the tank 1. These rows 11a and 11b extend parallel to each other and transversely to the direction movement of the farineur 6.
To regulate the flow of flour through the orifices 11, the farineur 6 comprises a flow actuator and drive means for driving this flow actuator when the container 7 is moved above the opening 3 In particular, when the farineur 6 is moved manually opposite the opening 3, the drive means are engaged which drive the flow actuator.
These drive means include a roller 10 which cooperates with the flow actuator in order to drive the latter. The roller 10 is in contact with the support surface 13 extending at least along the opening 3 when the container 7 is moved above the opening 3. In FIG. 11 the level of the support surface 13 is shown schematically by a dashed line.
BE2017 / 5033
On the end of the container 7 opposite the end which has the roller 10, a guide wheel 16 is mounted. This wheel 16 is provided with a circumferential groove 17 through which the wheel 16 is guided on a rail which extends along the opening 3 in said direction of movement. This rail can, for example, be formed by a rib which extends along the opening 3 in the direction of movement.
Thus, the container 7 is supported on one side by the roller 10 and on the opposite side by the said guide wheel 16. It goes without saying that possibly additional supports or wheels can be provided to prevent the farineur from overturning.
The aforementioned flow actuator comprises a closure member 18 having a plate 19 which extends along the container 7. This closure member can be moved between a closed position, in which the orifices 11 in rows 1a and 1 lb are closed by the member, and an open position, in which at least a portion of the orifices 11 or, in particular, at least one row 11a or 11b, is open. Thus, in said closed position, the plate 19 covers the orifices 11, while, in the open position, at least some of the orifices 11 are not covered by the plate and allow the flow of flour to the tank 1.
The flow actuator comprises a rotary axis 21 which extends substantially transversely relative to the direction of movement. Thus, the closing member 18, comprising the plate 19, can rotate around this axis 21 between the closed position and the open position.
Preferably, the farineur 6 comprises a spring 20 which drives the closing member 18, in particular the plate 19, towards the closed position. In the embodiment of FIGS. 9 to 16, such a spring 20 is provided on the axis 21 around which the plate 19 can rotate alongside the guide wheel 16, as shown in FIGS. 12 and 16.
The roller 10 has an axis 22 which is fixedly mounted relative to the closure member 18. This roller 10 is movable relative to the container 7 and is, in particular, vertically movable relative to the container 7.
Thus, when a vertical pushing force is exerted on the container 7 towards said support surface 13, the roller 10 moves relative to the container 7 and drives the closure member 18, in particular the plate 19, towards the position open against the action of said spring 20.
In the closed position, shown in Figure 10, the roller 10 extends substantially vertically below the axis 21 and the container 7 extends
BE2017 / 5033 essentially horizontally. When the closure member 18 is moved to the open position, as shown in Figures 9, 11 and 12, the roller 10 has moved vertically relative to the container, so that the latter becomes slightly inclined relative to the horizontal.
In order to be able to adjust the quantity of flour which is distributed in the tank 1, the roller 10 is mounted on a drive arm 23 which has the rotary axis 21 in common with the closing member 18.
This drive arm 23 can be fixed in several positions relative to the closing member 18 and makes it possible to adjust the number of rows of orifices which are covered by the closing member 18 in its open position.
To this end, the drive arm 23 can be rotated about the axis 21 relative to the closure member 18. The drive arm is then fixed relative to the closure member 18 so as to leave free one or more rows of orifices in the open position of the closing member 18.
In FIGS. 9 to 12, the faminer is shown when the drive arm 23 is fixed to the closing member 18 in an angular position in which the two rows 11a and 11b are not covered by the plate 19 in the open position, while in the closed position the two rows are closed.
In Figures 13 to 16 the angle between the drive arm 23 and the closure member 18 is fixed so as to open only a row of holes 11 in the open position of the closure member.
The example of the farineur 6 shown in FIGS. 9 to 16 is provided with two rows 11a and 11b comprising orifices 11, but it is also possible that more than two rows of orifices are provided or that the farineur has only one row with orifices 11. In the latter case, the axis 22 of the roller 10 can be fixed directly to the closure member since it is not necessary to adjust the flour flow rate for a single row of orifices.
To distribute flour in the tank 1, the flour processor 6 is actuated by manually moving it in said direction of movement and at the same time exerting a pushing force on the container towards the support surface 13. Following this pushing force , the roller 10 moves vertically with respect to the container 7 and the closing member releases the orifices 11 against the action of the spring 20. The farineur can be taken by the handle 24, which is provided for this effect.
In order to facilitate the vertical movement of the roller 10, it can be provided that the level of the support surface 13 in the released position of the farineur is
B E2017 / 5033 below the level of this surface along the access opening 3. Thus, when crossing the level difference, the transition from the position shown in FIG. 10 to the position of FIGS. 9 and It is made easier.
